The kernel that already existed
Popcorn was not invented. It is a hard-pericarp flint maize, the kind later filed as Zea mays everta, whose hull holds steam until the hull fails. The plant is older than the industry that now ranks it, older than the grocery tin, older than the steam wagon. What changed was not the physics of the kernel. What changed was who claimed the story.
The crop has cultivators. It does not have a founder. There is no Chief X, no named genius in a Balsas clearing, no European who "discovered" a food already selected, roasted, and worn as a garland.
A grass, not a product
Maize is a domesticate of Balsas teosinte. Molecular work places the wild ancestor, Zea mays ssp. parviglumis, in the seasonally dry tropical forest of the Central Balsas watershed in southwestern Mexico. In 2009, Anthony J. Ranere, Dolores R. Piperno, and colleagues reported an early Holocene sequence at the Xihuatoxtla Shelter, near the Iguala Valley in Guerrero. Stone tools there are radiocarbon dated to at least 8700 calendrical years B.P. A companion paper in the same PNAS issue recovered maize starch grains and phytoliths from those tools and from associated sediments, in contexts at and below that date. The authors treat maize and squash as early Holocene domesticates, grown by small groups who still moved with the seasons.
That is maize. It is not "popcorn invented." The 2012 PNAS paper on coastal Peru, citing that genetic and archaeological work, puts domestication in Mexico by about 8700 cal BP. Piperno, speaking later to Smithsonian, rounded it: "Corn was first domesticated in Mexico nearly 9,000 years ago from a wild grass called teosinte." National Geographic, on the same study, has her at "about 9,000 years ago." Underneath the round number is a Balsas date, a teosinte subspecies, and a set of microfossils. None of those objects is a popped kernel, and none of them names an inventor.
Popcorn, as a thing you can hold, is a later morphological fact. Smithsonian food writer Natasha Geiling, following Andrew F. Smith, describes it as a strain of maize "characterized by especially starchy kernels with hard kernel walls, which help internal pressure build when placed over heat." Heat turns interior moisture to steam. The pericarp holds, then it does not. That is why a hard, small-seeded flint can pop, and why a thin-hulled Northern Flint, the maize of early New England, mostly will not. The distinction matters, because the oldest stories the American industry likes to tell (a cave in New Mexico, a feast in Plymouth) depend on forgetting it.
The Peruvian cobs
The oldest maize that archaeologists can securely identify as a popcorn type, from the plant itself rather than from pollen or starch, comes from two Preceramic mounds on the Peruvian north coast: Paredones and Huaca Prieta. In 2012, Alexander Grobman, Duccio Bonavia, Tom D. Dillehay, Dolores R. Piperno, José Iriarte, and Irene Holst published 293 newly excavated macrofossils of popcorn and flour corn from those sites, in PNAS. Direct AMS dates on maize structures reach 6775-6504 cal BP (two-sigma). The earliest assay, OS86020, is a husk and shank from floor 18, unit 22, at Paredones. The attached cob is 3.1 centimeters long, slender, eight-rowed, and assigned to the race Proto-Confite Morocho.
The paper is careful about what it will date. Uncharred cobs from the same floor returned medieval and even post-bomb ages, which the authors reject as contamination. Husks, shanks, and burned cobs track the charcoal sequence. On that cleaned chronology they write: "On the basis of our results, the early Peruvian maize was a popcorn type in seed size, hardness, and popping ability." Other middle-preceramic cobs belong to the same primitive popcorn races already known from later Peruvian work, Proto-Confite Morocho and Confite Chavinense, and to hybrids between them.
Piperno told National Geographic that the oldest cobs "can be identified as popcorn," and that people at the sites would have cooked maize on coals, over flame, or in an earthen oven. She also said they did not eat it in large numbers. The PNAS authors, seeing how rarely the remains appear in deep, well-preserved deposits, infer that popcorn and floury maize were "not a primary food staple in the local diet before ~4500-4200 cal BP." Smithsonian has her more plainly: "It was probably a fairly minor component of the diet, because despite the very good preservation, not many cobs were found."
That last clause is the one the snack industry never reprints. The oldest securely identified popcorn is a minor food on a desert coast. Piperno told Smithsonian the sites sit "in a very, very arid climate, the coast of Peru, where it almost never rains," and that humidity, not time, is what usually destroys a cob. The mounds gave archaeologists what tropical forests almost never do: entire ears, husks, a tassel, a kernel, and a date on the plant itself. Microfossils, she said, can tell you maize is present. They cannot tell you what the ear looked like.
The Peruvian specimens also refuse a simple Mexican-to-Andean copy. They lack the indurated lower glumes of the nearly contemporary cobs from Guilá Naquitz Cave in Oaxaca, directly dated to about 6200 cal BP and still showing strong teosinte influence. Grobman found no teosinte traits in the coastal Peruvian maize. Piperno's gloss, to Smithsonian, was unheroic: "People just passed it along. Farmers like to exchange goods and ideas, so it was probably just passed from person to person, from farmer to farmer."
A few thousand years after Balsas, hard, poppable maize is on the Peruvian coast, already diversified into Andean races, already roasted, already not the staff of life. That is the archaeological floor. Everything else is a later claim.
What the colonial writers actually saw
The first written descriptions that can be tied to popcorn, rather than to maize in general, are colonial.
Bernardino de Sahagún, whose Florentine Codex is the central sixteenth-century ethnography of Nahua life, records momochitl as toasted maize that bursts. The Wired Humanities Nahuatl Dictionary, citing Anderson and Dibble's 1951 translation of Book 2 and folio 37r of the Codex, gives Sahagún's Spanish as "mahiz tostado...que cada grano es como una flor blanquisíma." Diego Durán, in the same entry, defines momochtli as "mais tostado y rebentado." Popcorn.org, which still mishandles the archaeology, at least reprints the English American popcorn history has used for decades. One passage: "And also a number of young women danced, having so vowed, a popcorn dance. As thick as tassels of maize were their popcorn garlands. And these they placed upon (the girls') heads." Another, from a ceremony for the gods who watched over fishermen: "They scattered before him parched corn, called momochitl, a kind of corn which bursts when parched and discloses its contents and makes itself look like a very white flower; they said these were hailstones given to the god of water."
Those sentences are liturgical. The burst grain is a white flower and a hailstone. It is worn, scattered, and given to water. To read them as a movie-snack origin is to flatten a ceremonial vocabulary into a concession stand.
In Peru, a century later, the Jesuit Bernabé Cobo wrote of toasted-and-burst maize as a confection. Popcorn.org dates the line to 1650 and prints it as: "They toast a certain kind of corn until it bursts. They call it pisancalla, and they use it as a confection." Food and ceremony, not a brand.
Andrew F. Smith, whose Popped Culture: A Social History of Popcorn in America (1999; Smithsonian paperback, 2001) is the scholarly baseline for the United States, argues that popcorn-type maize persisted most clearly in South America. "Popcorn went north and it went south, but as far as I can see, it really only survived in South America," he told Smithsonian in 2013. The eastern North American habit, in his reconstruction, is later and maritime. "Most likely, North American whalers went to Chile, found varieties of popcorn, picked them up and thought that they were cute, and brought them back to New England in the early 19th century." By 1848 the word was common enough for John Russell Bartlett's Dictionary of Americanisms. That is a historian's argument, not a closed case. It is stronger than treating every Indigenous maize culture north of Mexico as a popcorn culture by default.
The French accounts of Iroquois cooks popping kernels in pottery of heated sand sit in the same unfinished file. HISTORY.com repeats them as fact and uses them to put the earliest European-American popping in the Great Lakes. The story is everywhere. It is not yet a pillar. Until the named explorer, the year, and the food described are on the table, an atlas should say so, and move on.
The stories that will not die
The official history page at popcorn.org still opens the American story in the Bat Cave of west central New Mexico. Herbert W. Dick's excavations of 1948 and 1950 recovered tiny cobs, some smaller than a penny, some about two inches, and a few popped kernels. The site is real. The dating the industry prints is not. Popcorn.org says the oldest Bat Cave ears "are about 4,000 years old." The USDA National Agricultural Library exhibit, quoting the Popcorn Board, pushes the same find to "about 5,600 years old" and still calls those ears "the oldest ears of popcorn ever found." Both pages were written as if the 1980s never happened.
They did. Early publications used arbitrary one-foot levels in a mixed midden. Radiocarbon assays on associated charcoal were erratic. Michael S. Berry's 1985 reassessment made the stratigraphic problem explicit. University of Michigan work in the 1980s followed. Later dates put Bat Cave maize no older than about 3,120 BP. Older maize exists in the Southwest. It is not from Bat Cave, and it is not securely popcorn. To lead with Dick's cave is to prefer a mid-century press line over the paper trail.
The same exhibit that inflates Bat Cave also prints the oldest chestnut in the file: "The oldest known corn pollen is scarcely distinguishable from modern corn pollen, judging by an 80,000-year-old fossil found 200 feet below Mexico City." Even if those grains were maize-like (pollen of maize, teosinte, and Tripsacum has been argued over for decades), pollen is not a popped kernel, and 80,000 years is not a Holocene domestication. The Balsas dates, the Xihuatoxtla starch, and the Peruvian cobs are the record. A drill-core rumor under Mexico City is not.
Then Plymouth. HISTORY.com notes the claim that popcorn was on the table at the 1621 harvest feast, sometimes with Squanto as the instructor. "Unfortunately, this story contains more hot air than a large bag of Jiffy Pop." The maize around Plymouth was Northern Flint, "with delicate kernels that are unsuitable for popping." No contemporary account mentions popcorn. HISTORY.com dates the first Thanksgiving mention to "a fictional work published in 1889." Yankee Magazine, in a 1993 sampler still hosted by New England.com, asked Plimoth Plantation librarian Carolyn Travers, who called the cycle "a classic case of disinformation." The novel is Jane G. Austin's Standish of Standish (Yankee misspells the surname as Austen). In the book a Native attendant pours out "something like popped corn." Retellings added Quadequina, a deerskin pouch, maple syrup. Travers's staff tried the local flint. "The shell gets a little soft. The whole thing is mealy and disappointing."
Andrew F. Smith has said this in print since the 1990s. History Myths Debunked, quoting Popped Culture, records his indictment: "undocumented food stories" that "gain reality through repetition." His list includes Columbus finding popcorn in the Caribbean, colonial Americans eating it as a snack, and Indians in the eastern half of the present United States eating it in pre-Columbian times. BBC Future, in 2017, put the Thanksgiving and colonial-breakfast tales in the same bin: "there isn't any evidence to back up those stories." Smith's working view is that eastern North American popcorn in the early republic more likely arrived with nineteenth-century Chilean contact than with an unbroken woodland tradition. That is an argument. It is a better argument than a novel.
Columbus as discoverer is the European version of Chief X. Both need a first man. Both erase the cultivators who had already selected a hard pericarp and the writers who had already named momochitl and pisancalla.
What this means for a map of living farms
This atlas is a record of farms, kernels, brands, and the people who still grow a crop that predates the companies that sell it. The line is blunt on purpose. We keep the record. Nobody buys a ranking.
The origin record is short enough to hold in one hand. Maize was domesticated from Balsas teosinte in southern Mexico around nine thousand years ago. The oldest popcorn-type macrofossils that can be named, dated, and described sit on the Peruvian coast at 6775-6504 cal BP, a minor food among fish, squash, beans, and chili. Sahagún and Cobo, centuries later, saw burst maize used as offering, garland, hailstone, and confection. The American industry that now prints "history" on popcorn.org did not invent the kernel. It inherited a South American survival, a nineteenth-century eastern habit, a steam machine, a grocery tin, and a set of stories that flatter a national snack.
Those stories are not harmless. Bat Cave as "oldest," Mexico City pollen as popcorn, Plymouth as premiere, Columbus as discoverer: each one moves the center of gravity toward a cave the industry can point to, a holiday it can own, or a European it can thank. Each one makes the Balsas cultivators, the Peruvian mounds, and the Nahua and Andean names into scenery. An atlas that ranks living farms cannot afford that move. The farms are the current end of a selection that did not begin in Iowa, or in a Chicago wagon, or in a New Mexico press release from 1950.
The crop is older than the industry. The industry does not get to pretend it invented the kernel. What a ranking can do, if it is honest, is keep the names that can be kept, refuse the names that were never there, and leave the rest of the credit where it belongs: with unnamed Indigenous cultivators who turned a Balsas grass into a hard grain that still bursts, and who never asked to be a mascot.
